I press my tofu for a minimum of two hours, and have pressed it overnight several times. I then cube it, and marinate it in a mixture of things like soy sauce, rice vinegar, and other seasonings for at least 20 minutes [I’ve also marinated it overnight, if I have more time]. I then bake it for 20-40 minutes [depending on how large I’ve cut the cubes], turning the cubes to crisp on each side.
